Can't understand why i'm gaining weight?

Today's question is I've been exercising for a month and counting my calories avidly. While I have lost some weight I'm becoming very distressed. I currently weigh 154. I started at 159. However, on Monday my weight was down to 151 and has kept increasing slowly everyday since then. There is no way I gained 4 three pounds in muscle since Monday! Also I'm not menstruating/pmsing. I try to stick to 1250 calories a day. My BMR is 15250. I'm 21 yrs old and female. My current exercise regimen begins with some weight lifting (primarily focusing on my arms b/c my legs have an uneven amount of muscle in the front and not enough in the back, which has caused me some knee problems, so I'm only working the back of leg with weights which one of the trainers at my gym suggested I do.) Then I move onto cardio. I run for between 15-18 mins beginning at a warm up of a slow jog 4.6mph then increase gradually so about the last ten mins or so I'm running around 6mph. Then I move to the elliptical for another 10-15 mins. Doing this I burn about 350 calories. I try to run everyday and for the most part am able to, its rare when I don't but I will lower my calorie intake on days I cannot run to 1000 to make up for not getting the exercise. And I only do weights 3-5x a week max. some ppl have said i'm not eatting enough but you can eat 1200 calories a day and be fine. i really don't think thats why.

And I found this way It is probably water weight -- fat will not accumulate that fast It sounds backward - but you need to drink more water to flush your system Don't lower your calorie intake on days you don't run/exercise -- your body will interpret the lack of calories as starvation and will try to retain more fluids & fats.
